With all the gratifying responses for all the varied biryanis that I've shown you in the past. There are many ways to cook any biryani. I thought I'll take that leap a little forward and make you yet another Biryani. This biryani is special and called "Chicken Tikka Biryani".

Well, it's a Biryani but I'm going to make it a little. Let's begin. When I say it's going to be a different kind of biryani, I mean it. Well, this one is going to be almost, like a Mutton Biryani but it is a Chicken Biryani of course it is going to cook faster. And the Chicken is going to cook with the Rice, along with your parboiled rice remember that.

Once the Rice goes in now this is the main component of the Biryani and that is bringing in the moisture bringing in that element, of humidity in the biryani which makes it nice and fluffy also juicy at the same time because what is a biryani, is a combination of course of Meat and Rice but in this case, it has to have a little bit of masala, it has to have that little bit of, gravy that kind of evaporates, and flavors the Rice. Now to do that, this is the most important step and for this, you need to follow the recipe.

There are four easy steps in making chicken tikka biryani so these steps are as under:

Ingredients of making chicken tikka

  • Chicken = 750 grams
  • Yogurt = 100 gram
  • Red chili powder = 1 tbsp
  • Turmeric = 1 tsp
  • Ginger paste = 1tsp
  • Garlic paste = 1tsp
  • Salt = add to taste
  • Red or yellow food color = 1 pinch
  • Coriander powder = 1 tsp
  • Garam masala powder = 1 tsp
  • Oil = 1 tbsp
  • Green chili paste = 1 tsp

Method Of Preparation

Take chicken,  I've taken Chicken Thigh, Boneless. To make chicken tikka, and a deep cut in the chicken pieces with help of a knife and set aside.

In a bowl and add all the spices like yogurt, red chili powder, turmeric, ginger paste, garlic paste, salt, red or yellow food color, coriander powder, garam masala powder, green chili paste, and oil and mix well to make a fine paste, then add chicken pieces to this bowl mix well mix all this together. To marinate the chicken, after marination take the chicken refrigerator or cool place for about 2 to 4 hours. Well if you have some time at hand, you can also marinate this keep it in the refrigerator either overnight.

After 4 hours let's begin with Oil in a pan. Now I'm using a Cast iron pan or using a non-stick pan. I'm using a Cast Iron casserole. The reason is, this is going to be a one-pot recipe. fry the chicken tikka pieces on medium-low flame and fry one side at 15 minutes, after 15 minutes flip the chicken pieces and fry another side. this process takes about 30 minutes, after 30 minutes, Once the Oil starts releasing the sides of the pan we give one final stir, and with this off goes the flame. your chicken tikka is done set aside for later use in making chicken tikka biryani.

2. Boiled The Rice (only 80 to 90 percent)

Ingredients Of Boiling Rice

  • Rice = 750 grams
  • star anise = 2
  • black cardamom =1
  • Cumin seeds = 1tsp
  • Black pepper = 5 to 6
  • Cinnamon stick = 2-inch piece
  • Cloves = 3
  • Salt = as required your taste

Method Of Preparation

Take a pot and add 2-liter water to this pot then add all the spices like star anise, black cardamom, cumin seeds, black pepper, cinnamon stick, cloves, and salt, when water is boiled add the rice into this pot.

When your rice is cooked about 80% turn the flame off and strain the rice and keep another side for making chicken tikka biryani.

3. Make some gravy for biryani its give more taste

Ingredients of gravy

  • Onion = 2 medium size
  • Ginger paste = 1 tsp
  • Garlic paste = 1 tsp
  • Red chili powder = 1tsp
  • Red chili flakes =1 tsp
  • Tomatoes = 2 medium size
  • Yogurt = 100 grams
  • Dried Plum = 6 to 8
  • Bay Leaf = 2
  • Cinnamon stick = 2-inch piece
  • Cloves = 5
  • Green Cardamom = 3
  • Black cardamom = 1
  • Black pepper = 6 to 8
  • Cumin seeds = 1 tsp
  • Garam masala powder = 1 tsp
  • Fresh Coriander leaves = 1 tbsp
  • Fresh mint leaves = 1tbsp
  • Green chilies = 5 to 6
  • Salt = As you required
  • Coal piece = give the smoke to the gravy
  • Oil = 100 grams

Method of Preparation

So, let's begin on that note. First things, take a pan and add oil in the Oil I'm going to add in Sliced Onions. And along with the Onions I'm also going to add in, a little bit of Salt. Because that way the Onions will start caramelizing faster. do remember in your mind that you have added Salt at this stage. stir this well.

And while you're mixing this don't forget that the Onions are also getting brown, Let's, check that as well. Keep stirring, ensure there are no burnt sparks or burnt marks. This has to be mixed well.

I'm making like an instant biryani, so I'm going straight in. Our Onions have turned golden brown in color. What I am going to do is, take a little aside, and I'm going to use this right towards the end while garnishing the biryani. With the rest of the Onions, let's move in forward.

Into the Fried Onions I'm going to add in, all spices like ginger paste, garlic paste, tomatoes, red chili powder, red chili flakes, Bay leaf, cinnamon stick, cloves, crushed green cardamom, crushed black cardamom, black pepper, cumin seeds, and salt cook this mixture until tomatoes are soft.

when tomatoes are soft turn the flame on very low and then add the yogurt, mix all this together and keep stirring your spoon in the pan, when gravy has released the oil turns off the flame. Remember all through this process the flame is off.

Take coal and burn it in the fire, keep a foil paper in the gravy, the burning coal keep on the foil paper and add a drop of oil on the coal and immediately keep the lid on the pan. give the smoke of coal for at least 2 minutes, then keep out the coal.

add some garam masala powder, sprinkle fresh Coriander leaves and fresh mint leaves, and finally add green chilies, your "chicken tikka biryani" gravy is ready.

4. Layer the rice, Gravy, and Chicken Tikka, and keep the Chicken Tikka Biryani in dum

Ingredients for Layering

  • Boiled Rice = 750 grams
  • Chicken Tikka = 750 grams
  • Gravy = We are making for biryani
  • Fresh coriander leaves = 1 tbs
  • Fresh mint leaves = 1 tbs
  • Tomatoes = 1 medium
  • Remaining Fry onion
  • Yellow food color = 1 pinch
  • Garam masala powder = 1 pinch

Method of Preparation

Once all this is done, I'm going to add-in, Parboiled long grain rice. Well, remember, while you are doing this, ensure that you kind of ruffle it, so that it opens up a lid, without breaking the grains of Rice, move it around.

Take a separate pan to add half gravy to the pot you are making for biryani, then sprinkle half brown onion, fresh coriander leaves, and fresh mint leaves then add half boiling rice, tomatoes slices, and follow this step again and make the second layer of biryani, first add the remaining gravy and boiling rice,  sprinkle the remaining fresh coriander leaves, fresh mint leaves in the pan, and finally, add yellow food color and add a generous pinch of garam masala powder, and last but not least remember fried onions that we had removed right at the beginning of the recipe, and lastly keep Chicken tikka pieces on the rice in the pan on the flame.

Well not yet. It still has 20 minutes to go. Let's cover this, with the lid, turn the flame on, and cook this on high flame for 7 minutes. It's been 7 minutes on high flame, time to reduce the flame and cook this without opening on low flame for 20 minutes. it’s been 20 minutes and our chicken tikka biryani is ready.

Off goes the flame and the next step is important. We need to rest this for 10 minutes like that covered.
