  • bay leaves = 3 leaves
  • green cardamom = 1 teaspoon
  • dry red chili = 3 to 4

  • green chili = 4 to 5
  • garlic = 5 to 7 cloves

  • gram lentils = 250 grams

put water in a pan, then add the chicken I left it as big pieces, not small mix it now add the spices except the green coriander and green chili don't add salt yet because there is salt in the chicken powder. we just added when its cooked that's when we will check if it needs more salt mix it. I kept the chicken thighs big because we are going to shred it once it's cooked by hand then we will chop it after we are going to wait for it till it boils now add the gram lentils, now let it cook until everything cooks don't mix it with a spoon otherwise the lentils will be mashed and it will stick to the bottom. let it cook on medium heat the water has almost dried up everything has cooked, now mix it. now take the chicken out and shred it take the chicken out on a different plate let it cool then shred it.

I mashed it like a paste now put it back in the pan turn the heat high, so the water that is left can dry up quickly, don't mix it a lot otherwise, the lentils will break. the water has dried up completely turn the gas off. put it on a dish and cool down this mixture. it has cooled down now take out the dry spices like the cinnamon sticks and bay leaves but keep the red chili in and black pepper we will blend it with it but take out the rest of the spices. it has cooled down completely. now I have taken out all the dry spices. now mash it with your hands. if you don't want to then you can blend it but I'm going to do it with my hands because I used thigh and it's really easy to mash it with your hands.

I have mashed it, it should be smooth, I'm going to chop it 1/2 times more because we want it to be smooth. now add the chop green coriander and chop green chili, then mix it with your hands. after mixing it, check your salt, for my kabab mixture it was less. I added more salt now I'm going to mix it again. after adding green chop coriander and chopped green chili. it has been mixed, get 2 eggs and beat it. now make the Shami kabab how big or small do you want it to be, I have made all the Shami kababs, if you want you can fry it without egg, so if you don't you can add the eggs while you're mixing the mixture but I'm going to put the egg on it, and at this stage, you can freeze them.
